- 4 cup green cabbage finely chopped
- 1 cup green tomatoes finely chopped
- 1 cup green bell pepper finely chopped
- ½ cup yellow bell pepper finely chopped
- ¼ cup carrots thinly sliced
- 1 cup yellow onion finely chopped
- 2 tablespoon kosher salt
For the brine:
- 2 cups apple cider vinegar
- 1 cup granulated sugar
- 1 teaspoon mustard seeds
- ½ teaspoon celery seeds
- ½ teaspoon turmeric
- ¼ teaspoon red pepper flakes
- ½ teaspoon freshly ground black pepper
In a large bowl, combine the cabbage, green tomatoes, both bell peppers, carrots, and onion. Sprinkle with kosher salt and toss well. Let it sit for 1 hour to draw out excess moisture.
Transfer the mixture to a colander and rinse lightly under cold water. Drain thoroughly and press gently to remove excess liquid.
In a large pot over medium heat, combine apple cider vinegar, sugar, mustard seeds, celery seeds, turmeric, red pepper flakes, and black pepper. Stir until the sugar dissolves and the mixture begins to simmer.
Add the drained vegetable mixture to the pot. Mix well to coat. Bring to a gentle simmer and cook for 15 to 20 minutes, stirring occasionally, until vegetables soften slightly but still retain texture.
Remove from heat and let cool for 10 minutes. Transfer to clean jars. Allow to cool completely before sealing. Refrigerate for at least 24 hours before serving.
